Good Moist yellow cake
The cake box instructions were easy to follow for this Duncan Hines classic Keto yellow cake . The instructions say it requires eggs coconut oil, water, and a cake pan.Once the cake is poured into the cake pan, I needed to shake the pan a little to even out the mixture. The batter seemed smaller than I expected but it baked evenly after it was taken out of the oven. I would recommend this keto cake to someone who feels like they are missing out and want to enjoy cake.

Very good. Not low calorie.
Measurements below are for 2 boxes.
Added 4 tablespoons of canola oil ( I didnt have coconut oil) instead of 6 tablespoons. Added 2 Tablespoons of vanilla extract, eggs, water.
Used my hand mixer just to incorporate all the ingredients and no lumps.
Line a jelly roll pan with parchment paper and lightly sprayed around the edges.
Spread all the mix and smoothed it out.
Bake at 350 degrees F for 20 minutes. Cool completely.
The added vanilla extra boosted the flavor.
Its also very moist.

Feels Like I Am Cheating
I use half and half instead of water and butter instead of coconut oil. I also add some vanilla extract and pumpkin spice to doctor it up a little. Microwave the frosting for about 15 seconds and pour it over the cake and spread. Let the frosting cool and set. This cake tastes just like the regular cake and I don’t take a drop of insulin to eat it!! I am a type one diabetic and this keto cake/frosting does not affect my blood sugar at all! The almond flour is good for me.

Excellent GF cake mix. Honestly wouldn’t be able to tell the difference if I hasn’t made it myself. Only recommendation is to buy multiple if you want a typical 9 by 13. My one box barely made an 8 by 8, but it was delicious and I received many compliments.

Makes a great Honey Bun Cake
I have made a Honey Bun cake using SPLENDA brown sugar ( I tried Swerve and do not like it as well for baking) I have also used this as the “cake” in Strawberry Shortcake using Sugar Free Jello and Heavy Whipped Cream sweetened with Splenda. I find this mix to pretty versatile, But, it does have that “grainy texture” often found in Keto desserts with Coconut or Almond flour.

Very good, very moist cake..as a long time keto dieter, I am shook. I’ve been buying much more expensive products that don’t taste nearly as good. I added a little vanilla to the mix. It does have a slight coconut flavor. You can lean into that and add unsweetened coconut or make a coconut keto frosting. I’ve eaten mine with keto vanilla ice cream, cream cheese frosting- also keto, or just plain. The coconut flavor isn’t such that you can’t hide it pretty easily. I’m very impressed with this cake mix. It’s a great base for many keto desserts. You must give this a try. It’s made my keto lifestyle easier and more fun.
